  
• 2 ½ cups whole milk
• ½ cup sugar
• 2 large eggs, lightly beaten
• ½ cup of heavy cream
• 1 teaspoon of vanilla extract
• 2 cups chopped fresh peaches
• 1 ½ cups coarsely crushed amaretti cookies, divided.
In a medium saucepan, heat the milk until small bubbles form around the edge, about 3 minutes to 4 minutes.
In a large bowl, whisk together sugar and eggs. Slowly whisk in milk until well combined.
Pour back into the saucepan, blend in the cream and cook on medium heat, stirring occasionally, for 6 to 8 minutes or until the mixture thickens slightly. Pour through a fine mesh strainer into a large bowl. Stir in the vanilla and peaches.
Refrigerate for 4 hours or until well chilled.
Mix in 1 cup of crushed cookies. Process in an ice cream maker according to the manufacturer’s directions.
Garnish with the remaining crushed cookies before serving.
